I've actually never had one of these before. And when the choice is between boring beef medallions, an entrecôte full of sinew and with no fat, and a chunk like this full of intramuscular fat marbling—I just can't resist. Besides, it was cheaper than everything else.
It will be served on New Year's Eve after having been "in the bath" for 24 hours, with Hasselback potatoes and a homemade red wine sauce. For the starter, I've whipped up a lovely light tuna mousse. And for dessert, a deathly boring vanilla ice cream—but there probably won't be room for it anyway, so it hardly matters!
